Halloween Popcorn Cake

This is an easy treat to make out of popcorn, pretzels, marshmallows and M&M’s.  It makes a great sweet and salty snack!  If you aren’t sure about a popcorn cake, try it!  After all, what do you have to lose?  I wasn’t so sure about it until I made it and it really is good!  Who wouldn’t like a “cake” made of buttery, salty popcorn, sprinkled with Halloween colored M&M’s and salty pretzel sticks, all held together by sticky, sweet marshmallows?  Here are the directions:

Spray a large tube or bundt pan with cooking spray.

Pop 2 bags of buttered microwave popcorn and dump into a large bowl.  Pick out the unpopped kernels.  They aren’t good for your teeth!  I used “Butter Lovers” popcorn–might as well make it as buttery as possible!

Mix in 2 cups of Halloween colored M&M’s and 1 1/2 cups broken pretzel sticks.  Don’t crush the pretzel sticks, just break them into smaller pieces.Halloween Popcorn Cake with M&M's

Melt 1 stick (1/2 cup) of butter over low in a large saucepan.

After the butter has melted, add  a 16 oz bag of mini marshmallows or 8 cups.

Stir until melted and smooth.

Remove from the heat and pour over the popcorn mix.

Stir until all the ingredients are combined and then press into the prepared pan.  I used a spatula to press the popcorn mixture into the pan.

Cover with foil and let set for at least an hour to cool.

When ready to serve, turn the pan upside down and it should slide out of the pan onto your serving platter.  Make sure it cools completely so it is easy to cut!
